The Bread Station | All in the mother dough

The Scandanavian minimalist concept at The Bread Station moves away from industrial bread-making and back toward craftwork.

If not for the small signboard standing on the sidewalk, one could easily walk past The Bread Station without ever knowing it was there. This lack of signage, as well as the bakery’s simple set-up, however, underscores what’s really im- portant here: the bread.

A concept from Danish breadmaster Per Brun, The Bread Station aims to bring bread back to its roots. The continuously worked mother dough gives her offspring beautiful crusts and flavor- ful, airy interiors.

In addition to bread, there’s also a selection of sugary baked goods to choose from, with the cinnamon rolls being especially dreamworthy. Wonderfully fluffy, with lots of cinnamon and marzipan hidden inside, these treats alone are worth a trip. (cr)
